This is best with the long Treviso radicchio if you can find it.


  • 4 heads radicchio, halved lengthways
  • salt and freshly ground black pepper
  • 4—5 tablespoons


Preheat the oven to 200°C/400°F/gas mark 6. Cut out the central part of the radicchio stalk, leaving enough on the sides to hold the leaves together. Season lightly with salt and pepper and brush the cut side with oil. Heat a baking tray in the oven for a couple of minutes. Arrange the
