Baked onions are great with pork chops or sausages. This recipe uses sliced onions, but you can bake whole small onions, or halved onions, too — they just need longer. Balsamic or sherry vinegar can be used instead of the red wine vinegar given here; whichever vinegar you use, it must be of decent quality.

Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 t

Method

Preheat the oven to 200°C/400°F/gas mark 6. Put the oil, vinegar and thyme into a large bowl and add the onion slices, coating them evenly. Transfer the onions and dressing to an ovenproof dish. Tuck in the bay leaves if you are using them, sprinkle over the sugar, salt and pepp
