Deep orange-coloured sweet potatoes have a soft moist flesh that responds well to sweet flavours (honey, maple syrup, fruit juices), and to alcohol (rum, whisky, cognac, port). With this in mind, and perhaps the addition of warming spices — allspice, cinnamon, cloves, ginger, quatre-épices — this dish can be endlessly varied.


  • 750 g sweet potatoes, peeled and cut into chunks

Preheat the oven to 180°C/350°F/gas mark 4. Put the sweet potato chunks in a single layer in a baking dish. Whisk together the orange juice, honey, balsamic vinegar, port and seasoning. Scatter the orange rind over the sweet potatoes, pour over the liquid and dot with small pieces of b
