Deep orange-coloured sweet potatoes have a soft moist flesh that responds well to sweet flavours (honey, maple syrup, fruit juices), and to alcohol (rum, whisky, cognac, port). With this in mind, and perhaps the addition of warming spices — allspice, cinnamon, cloves, ginger, quatre-épices — this dish can be endlessly varied.
