This is a simple way of cooking fish in the wood-fired oven, keeping a whole fish moist in a foil parcel. Use smaller fish for individual parcels, one for each guest if you wish, so that everyone opens them together and inhales the delicious cooking aromas as they waft out. You can also use salmon or red mullet for this recipe.

  • 1 x 2 kg/ lb whole sea bass, cleaned and descaled
  • 1 lemon, thinly sliced
