This delicious Greek recipe for slow-cooked leg of lamb with potatoes, lemon and oregano is named after the klefts, bandits who lived in the Greek mountains during the Ottoman Empire. The klefts would steal goats and sheep from neighbouring villages and cook them in sealed pots in a pit in the ground, so that the smoke from a fire wouldn’t be seen.
