This classic Italian recipe would once have been cooked in the communal clay ovens of villages all over Italy. Pork shoulder is a sadly overlooked piece of meat, but with its generous layer of fat on top it responds really well to slow roasting. If there are any leftovers the next day, it is delicious shredded with gherkins in a sandwich.
