Rabbit is a delicious and inexpensive meat that seems to have fallen out of favour, although it is full of flavour and low in fat. It can be purchased from butchers or local farmers’ markets, both of which will do all the skinning and jointing for you. This is another recipe that works well in a falling wood-fired oven, as the gentle heat keeps the rabbit moist and succulent. Serve with baked sweet potatoes.
