A frittata is a marvellous thing — a few golden-yolked eggs beaten and then cooked with some simple ingredients. Use whatever herbs you have available — parsley, chives, tarragon or oregano — and experiment to see the different effects. Traditional frittatas are cooked on the hob, but using a wood-fired oven is less likely to dry out the bottom and keeps the insides deliciously moist.
