These fritters are a great snack, delicious straight out of the wood-fired oven, where they cook very quickly in the intense heat, becoming brown outside and meltingly tender inside. You can substitute finely grated carrot or butternut squash for the courgette, to vary the result. Small fritters make wonderful finger food for a crowd — they look stunning and smell amazing, and will delight your guests.
