Autumn squashes and sweet potatoes can be very sweet, so using garlic, chilli and thyme cuts through that sweetness to create a more balanced dish. You can use any kind of pumpkin or yellow squash such as butternut. A whole bulb of garlic may sound like a lot, but roasting makes it incredibly mellow.

Ingredients

  • 1 pumpkin or yellow squash, about 600 g/ lb in weight

Method

  1. Build up the fire in the oven until the temperature reaches 190°C/375°F. This will take about 40 minutes. Push the fire to the back with a metal peel or coal hook, and close the door to keep the heat inside.
