This is a versatile dessert, which works well with plums, apricots and peaches as well as pears and apples. The puff pastry cooks very well in the wood-fired oven, as the high heat really makes it rise so that it is light and crispy while charring the edges of the fruit slightly and keeping it juicy.

Ingredients

  • 1 rectangular sheet ready-rolled puff pastry
  • 90 g / oz toasted flaked (sliced)

Method

  1. Build up the fire in the oven until the temperature reaches 200°C/400°F. This will take about 50 minutes. When it is up to temperature, push the embers to the back of the oven, using a metal peel or coal hook. Close the oven door
