You need a very low temperature to cook meringues on the outside and keep them slightly gooey on the inside, so leaving them overnight in a cooling oven is perfect. You can put the meringues in the oven at the end of the day, and just let them sit there until the next morning. They store well, too, so are worth making in quantity.

Ingredients

  • 4 egg whites
  • 225 g /8 oz caster (superfine) sugar

  1. The oven needs to have cooled to around 100°C/200°F when you put the meringues in, and then needs to fall in temperature, so don’t worry about keeping the fire built up. Line a baking sheet with baking parchment.
