This is a lovely way of cooking slightly unripe fruit. The wood-fired oven helps concentrate its flavour, as well as making it deliciously tender and developing its natural sweetness. Serve straight out of the oven, topped with toasted almonds and whipped cream, or try them on a piece of buttery brioche with yogurt for breakfast.

  • 7 fresh peaches
  • 3 amaretti, crumbled (use the double-baked Italian ones wrapped in paper if you can)
