A good chocolate brownie is irresistible — dark, moist and slightly chewy. Baking brownies in the wood-fired oven works well, and you can put them in at a low temperature, which will let the top set while keeping the base moist. Let the brownies cool in the tin, as it is then easier to cut into pieces; if you can’t wait, just spoon them out of the tin while warm and serve with good-quality vanilla ice cream.
