This is a great cake to have in your store cupboard. It keeps very well in an airtight container and is delicious with a good cup of tea and a slice of cheese. Just remember, you need to soak the fruit in the tea overnight, so start a day ahead of when you want to bake the cake. Baking the cake in the wood-fired oven works really well because you can utilize the heat produced from cooking something that needs a higher temperature and you won’t waste the heat.
