This keeps in the fridge for a day or so or, if simmered for a few minutes, it will keep for a few days. It goes really well with cold cuts or spread in sandwiches with cheese.

Ingredients

  • 1 medium red onion, peeled and finely diced
  • ½ red chilli, de-seeded and finely chopped
  • 3 tablespoons freshly squeezed orange juice
  • 150 g (5 oz) walnuts, roughly chopped
  • 3 tablespoons olive oil
  • 2 Granny Smith apples, cores removed
  • 10 fresh or dried dates

Method

Mix onion and chilli with orange juice and leave to marinate for 1 hour. Gently fry walnuts in oil until just beginning to turn golden. Remove from heat. Grate apples and combine with onion mixture. Remove stones from dates, chop finely and add to the apple mixture with walnuts and oil. Mix well and taste for seasoning.
