Ingredients

  • 1.2 kg (2 ½ lb) potatoes
  • 250 g (8 oz) butter
  • 150 ml (5 fl oz) cream
  • 100 g (3 ½ oz) basil pesto

Method

Boil peeled potatoes in salted water until tender. Bring butter and cream to the boil and mix in pesto. Drain potatoes and mash. Stir in warm basil cream. Season to taste.
