  • l00 g (3 ½ oz) mascarpone
  • 8 basil leaves, finely sliced
  • 2 tablespoons caster sugar
  • 150 ml (5 fl oz) double or whipping cream


    Place mascarpone, basil and sugar in a bowl and whisk briefly to bruise the basil. Add cream and whip to form soft peaks. Serve a good dollop of this with the plums.
