This versatile syrup (also known as sugar wash and sugar syrup) can be used for moistening cakes and sponge layers before assembling them as well as glazing (for example on Bath Buns-brush on when hot from the oven). You can also add flavourings such as juices, alcohols or zest and spices. Follow the same recipe below but in larger quantities to make a sugar syrup suitable for poaching fruit.
