This buttery sponge cake was named after Great Britain’s Queen Victoria who is said to have enjoyed a slice with her afternoon cup of tea. By 1885, the Victoria Sponge (also known as the Victoria Sandwich) took centre stage at tea parties, including those hosted by the Queen herself. There are endless versions of this ubiquitous British sponge but I like the traditional take on this cakey sandwich with jam and cream.
