This recipe has been sent to me by my great friend Donovan Cooke who I worked with for many years when he was Head Chef of Marco Pierre White’s Harvey’s. Yorkshire-born Donovan has also worked at The Savoy and the Waterside Inn in the UK, as well as La Cote St Jacques in France.
