Originating in Palermo, the island’s capital, Cassata is the iconic cake of Sicily. This layered alcohol-soaked sponge has a sweet ricotta filling, topped with marzipan and fruit. What began as an Easter tradition today sees Cassata spanning every season, including Christmas.

  1. Preheat the oven to 170°C/325°F/gas mark 3, and grease and line a 23cm (9in) springform cake tin with baking parchment.
