This is my version of a French cake called a Gâteau Weekend - so named because it is eaten at the weekends and stays fresh all weekend. I was taught to bake this gem of a cake in Paris more than 20 years ago. Delicately fragranced with lemon zest, it has won many hearts along the way. It has also become Marco Pierre White’s favourite teatime treat.
