In Japan, green tea is traditionally served with the dessert course, which used to be fruit, though in recent years the Japanese have certainly discovered cake and Western pastries in a big way. In this East meets West cake, the subtle flavour of the green tea infuses a Western pound cake - with fabulous and colourful results.

Ingredients

  • 375 g (13 oz) plain flour
  • 1 tsp baking powder

Method

  1. Preheat the oven to 170°C/325°F/gas mark 3, and grease and line a 25cm long x 8cm x 8cm (10in x 3¼in x 3¼in) deep loaf tin with baking parchment.
  2. Sift the flour, baking powder and Matcha powder together into a bowl.
  3. Cream the butter and sugar
