Pistachios and lemons both grow plentifully in Turkey and the Middle East and it is a common combination in the cuisine of that region. I have created a recipe here to combine these two stunning flavours. The result is a delightfully tangy teatime treat with fantastic flavour.

Method

Preheat the oven to 160°C/310°F/gas mark 2½, and grease and line a 16cm x 6cm deep (6¼in x 2½in) round cake tin with baking parchment.
Make the sugar syrup by heating the ingredients in a pan. Cook over a low heat until clear, stirring continuously, th
