This delicate potato and cashew cake hails from Mozambique, along the east coast of Africa. Mozambique was colonised by Portugal in the 16th century, after Vasco da Gama first reached its shores in 1498, and this cake has strong Portuguese overtones. However, the Mozambiquans have made it their own, adapting the original recipe to include the indigenous ingredient of cashews - one of the country’s principal crops.
