No baking is required for these yummy squares of chewiness. They just need to be set in the fridge, hence the name; though some people also call this cake ‘tiffin’. You can include all sorts of ingredients, so you just need to pick your favourites for the perfect teatime treat.

Method

  1. You will need an 18cm (7in) square tin.
  2. Place the biscuits in a plastic bag and bash with a rolling pin into small pieces.
  3. In a heatproof bowl over a pan of simmering water, melt together the chocolate, butter and golden syrup, stirring occasionally.
  4. Remove from the heat and add the biscuits, apricots, nuts and raisins, and mix well.
