This Corsican cheesecake is really a cross between a flan and a rustic cheesecake and is the most famous and popular cake from the island of Corsica in the Mediterranean. Traditionally, it is made with a Corsican goat’s cheese called Brioccu but I’ve found that ricotta or cottage cheese (which is slightly easier to get hold of) works just as well.
