These little delights have a very distinctive outer edge and originate from Bordeaux in Southwest France. Traditionally, these mini-cakes are baked in copper moulds, which ensure a crispy outer layer with a soft inside. You can buy these moulds from specialist cake suppliers for extra authenticity but you can use silicone moulds too (just make sure they’re deep enough) - I’ve used both with great results ah round.
