These little pancakes are also known as ‘drop scones’ because dollops of the mixture are dropped from the spoon into the pan, or griddle, which is how they were traditionally cooked. And Scotch Pancakes have been cooked on cast-iron griddles in Scotland, UK, since the 16th century. They can be served at any time of day and are traditionally spread with butter and jam (like toast) and must be eaten straight away - though, that’s not normally much of a problem.
