‘Cream coloured ponies and crisp apple strudels...’ were some of Maria’s favourite things in The Sound of Music, set in Salzburg in Austria where these layered filo pastries are traditionally eaten, and in nearby Bavaria. ‘Strudel’ means ‘whirlpool’ as the pastry dough is spiralled around itself. And even though Apple Strudel will be the most familiar, you can make strudel with all kinds of fillings (sweet and savoury) - walnuts, pumpkin, cabbage and quark, among other ingredients.</
