Add the ground pork to a large bowl.
In a blender, combine the ginger with ¼ cup (60 ml) water. Pulse until it becomes a smooth mixture.
Mix the ginger mixture into the pork. Add the salt, oyster sauce, soy sauce, cooking wine, white pepper powder, and lotus root or water chestnuts. To combine, stir with chopsticks in only one direction to promote better cohesion of the filling.
