Think of this as a savory oatmeal. Congee has been touted as a “cool new thing,” and there are a lot of fancy versions out there with poached eggs or abalone. Traditionally, though, it’s actually pretty plain—a budget-friendly breakfast made from rice and water. The flavors and seasonings come in through the toppings: super salty pork floss, slightly funky thousand-year egg, umami-packed fish flakes, you name it.
