Seeing as this is street food, efficiency is key. This one sauce, which is typically used on boiled skewers, condenses every flavor you’d possibly want when you’re a little tipsy: nutty, spicy, roasted, salty, and funky. It’s got the pungent kick of Pixian bean sauce, the sweet-salty maltiness of sweet flour sauce, and that iconic ma la tingle. Needless to say, it’s good.
