For the Skewers

  • 1 pound (455 g) honeycomb beef tripe
  • 2 teaspoons Sichu

Method

Clean the beef tripe under cool running water. Add it to a large pot along with 10 cups (2½ quarts/2.4 L) water and all of the seasonings. Cover and bring to a boil over high heat.
