Let’s start easy, with these pre-cooked “tofu” cakes made out of pureed fish—very similar to the fish balls you might see in any hot pot spread, but even tastier when grilled and smoky.
Cut each of the fish tofu pieces in half.
Thread 4 pieces of the fish tofu onto each skewer, skewering them lengthwise. These can be refrigerated, covered, for up to 1 day.
Prepare a robata or other grill with charcoal that has turned ashy gray and is smoldering hot but not actively emitting flames.
