These grisly, crunchy skewers are as fun to eat as they are hard to make. (But did I ever say any of this would be easy?) Every time I think about these skewers, I worry about accidentally stabbing myself as I try to thread the gizzards onto the sticks. But I do it for the crunch, and if you’re into that texture, you should, too. (Just be careful not to stab yourself.)
