When cooked correctly, the intestines are crisp on the outside and fatty and soft on the inside. Wrong, and you end up with nearly burnt slices. Do yourself a favor and get the timing right.

Method

To make the pork

Add the intestines and the remaining ingredients to a large pot and submerge with water.

Cover and bring to a boil over high heat. Boil for 5 to 6 minutes, then turn down the heat to low. Simmer for 1½ hours. The intestines should be tender enough to poke through with a pair of chopsticks.
