Mung bean jelly is a typical snack all over China, especially during the summer. I like to make a big batch of the jelly, store it in my fridge, and cut out pieces for a refreshing bite on hot days, dressing the cool gelatinous slivers in our signature spices and chili oil. It’s what I would consider junk food, except tastier than a bag of Doritos (there, I said it). It’s also messier, since the jelly is super slick and easily dropped into stain-making sauces, so be careful with your chopst
