In China, hot dishes are typically served excruciatingly hot, to the point where if you’re not careful, you could get burnt. It’s both a sign that the food is fairly fresh and, let’s be real, safe to eat. My dad, who grew up with siblings to fight over food with, has a higher tolerance for heat than I do (I’m an only child). So when he orders this dish (one of his favorites), I’m only able to eat two pieces while he downs the rest of the fiery hot potatoes.
