Gently fry chopped onion, garlic, carrot and some aromatic like celery or celeriac, a pepper chopped small, and herbs. Fry them until soft, then add water and a pinch of salt. Simmer for 30 minutes, then sieve, pressing the pieces against the mesh with a wooden spoon.
