Made with organic chicken livers this is a quick, delicious lunch to eat with bread or rice.


  • onion 1, sliced
  • garlic cloves 2, smashed and chopped in a little salt
  • strip of lemon peel
  • isot biber 1 tsp
  • pul biber ½ tsp
  • cumin seeds 1 tsp
  • chicken liver 250 g/8 oz
  • tomato paste 1 tsp
  • chicken stock 150 ml/½ cup
  • sumac ½ tsp


  • Stir fry the onion, garlic and lemon peel, the two chillis and cumin.
  • When the onions soften, fry the livers in the soffrito until they are nicely browned, add the tomato paste and the chicken stock.
  • Cover and cook gently for ten minutes. Sprinkle with sumac and serve with lemon wedges.
