This is a Mediterranean salad concocted from ingredients easily lifted from other people’s gardens. I could eat it forever, with a chunk of good bread.
Peel the cucumber, halve lengthways, and scoop out the seeds with a spoon. Cut it into half-inch cubes. Cut and cube the pepper and tomato. Peel and slice the onion thinly from top to tail.
Put everything into a salad bowl and crumble the feta on top, with the parsley. Combine the dressing ingredients in a small bowl, pour over the salad, toss and serve.
