This is a Mediterranean salad concocted from ingredients easily lifted from other people’s gardens. I could eat it forever, with a chunk of good bread.


  • cucumber 1
  • red pepper 1
  • tomato 1
  • red onion 1
  • feta cheese 100 g/4 oz
  • parsley small bunch


  • olive oil 4 tbsp
  • garlic ½ clove, crushed and chopped in salt
  • lemon juice 1 tbsp
  • sugar ½ tsp


  • Peel the cucumber, halve lengthways, and scoop out the seeds with a spoon. Cut it into half-inch cubes. Cut and cube the pepper and tomato. Peel and slice the onion thinly from top to tail.
  • Put everything into a salad bowl and crumble the feta on top, with the parsley. Combine the dressing ingredients in a small bowl, pour over the salad, toss and serve.
