Soak the beans overnight and boil them until they’re tender. Drain, and mix them while still hot with the onion, garlic and oil in a salad bowl. Season with lemon juice, salt and sumac and stir in the parsley.
Allow the beans to cool to room temperature–about an hour – and serve with lemons.
