  • white beans 350 g (a tin if you are in a rush)
  • red onion 1, finely sliced
  • garlic a clove, finely chopped
  • olive oil
  • juice of half a lemon
  • salt
  • sumac 1 tsp
  • parsley bunch, chopped
  • lemons


  • Soak the beans overnight and boil them until they’re tender. Drain, and mix them while still hot with the onion, garlic and oil in a salad bowl. Season with lemon juice, salt and sumac and stir in the parsley.
  • Allow the beans to cool to room temperature–about an hour – and serve with lemons.
