The Ottomans adored picnics, which they often took at the Sweet Waters of Europe, up the Golden Horn. Put this together with good bread and a goat’s cheese…
white beans350g (a tin if you are in a rush)
red onion1, finely sliced
garlicaclove, finely chopped
juice of half a lemon
Soak the beans overnight and boil them until they’re tender. Drain, and mix them while still hot with the onion, garlic and oil in a salad bowl. Season with lemon juice, salt and sumac and stir in the parsley.
Allow the beans to cool to room temperature–about an hour – and serve with lemons.
