What could be more refreshing after a trip to market, or when you are lying in the garden with a book?


  • granulated sugar 225 g/8 oz
  • boiling water 250 ml/1 cup
  • zest of a lemon
  • juice of four lemons
  • sprig of mint


  • Dissolve the sugar in the boiling water. Take it off the heat and add the grated lemon zest.
  • Pour the lemon juice into a jug. Strain the cooled sugar water into the jug and mix it with the lemon juice and cold water to taste – probably another ½ litre.
  • Refrigerate and serve chilled, with a few leaves of fresh mint.
