This is a lovely aromatic dish that is as good cold as hot, and cooks quietly, without interference.


  • shin of beef 1kg/2lb, boned and rolled
  • olive oil
  • fennel seeds 2 tbsp
  • garlic 2 cloves
  • wine 2 tsp
  • water 4 tbsp
  • splash of olive oil
  • pearl onions or small shallots ½ kg/1lb, peeled
  • sugar 1 tbsp


  • In a casserole with a tight fitting lid, brown the meat in the oil. Add all the other ingredients except the sugar and onions, put the lid on tight and lower the heat of the hob to a whisper.
  • After an hour, add the sugar and onions and turn the meat. Replace the lid and cook for another hour, very slowly.
  • Serve sliced on a warm plate, drizzled with its juices.
