Yashim has bÖrek for breakfast, but a spicy omlet makes a good alternative: or it’s lunch. Yashim has made it late at night for a hungry lover. At fancy Istanbul hotels, the breakfast chef will make up your omlet to your liking, and cook it for you on the spot. Two minutes.

Ingredients

  • eggs 4
  • salt
  • pepper
  • butter
  • 1 tsp
  • spring onions 3, sliced in rings, green parts too
  • parsley small bunch, finely chopped
  • chilli flakes

Method

  • Beat the eggs with the salt and pepper. Melt the butter in a wide frying pan and add the onions just before the butter starts to burn. Stir them about for a few moments, to wilt, then give the pan a shake and pour in the egg. Sprinkle the cooking egg with parsley and chilli, to taste.
  • Keep tipping the pan to give the runny egg a chance to slide onto the hot sides. When the parsley is about to be gripped by the setting egg, slip your spatula under the omlet and fold it neatly over. Give it a shake, and serve.
