Every child should know how to make tomato sauce. It is cheap, quick, delicious and open to all possible variations. Tinned tomatoes, which look fabulous and taste unbearably sour, are transformed in a few moments into a rich, succulent sauce that can amiably accompany almost anything.

Ingredients

  • tomatoes 400 g/14 oz tin
  • generous glug of olive oil
  • garlic

Method

  • Empty the tomatoes into a pan. If they are whole, squash them between your fingers or, if you are fussy or very smartly dressed, crush them with a wooden spoon. Put the pan on the heat and stir in the oil, the garlic, the sugar and the salt.
  • Bring the tomatoes to the boil then put on a lid and simmer for twenty minutes or more.
