Shami kebab is a popular street-food snack, usually made with chicken, lamb or beef, but here I have chosen to use goat meat, which is an economical option and just as succulent and tasty. It is such a widespread dish in northern India that you will find every person has their own way of making it. The chopped herbs and red onions in my version give it a nice chunky texture and you get a little bit of sweetness coming through from the onions.
