These melt-in-the-mouth lamb patties are from the historic city of Lucknow, famous for its succulent kebabs. The raw papaya paste is used as a meat tenderizer – it is available in Indian grocery stores. If you can’t find it, use pineapple juice instead. An optional step here is to smoke the lamb before cooking, which makes the meat delightfully aromatic.
